  • Sicily: Roll cake with pistachios from Bronte

Dark chocolate coverage: 300 gr.
Rice flakes 150 gr.
Pistachio shell: 100 gr.
Ground almonds 100 gr.
Tablespoon of strong coffee: 1
Good preparation !!

Very coarsely chopped pistachios;

Mix them with rice flakes keeping some whole pistachios and ground almonds;
Melt chocolate in a double boiler and add the rice flakes, almonds, pistachios and coffee;
Knead the mixture to make it smooth;
With moistened hands in cold water formed a compact roll diameter of about 5 cm. and wrap it in plastic wrap;
Let cool in the fridge for 3-4 hours;
Cut the roll into slices and accomodatelo on a platter.
The suggestions of the chef:
1. if the mixture becomes too soft, blend 1-2 tablespoons of flaked rice flour and add to the mixture until it reaches the desired consistency.

I love this idea! I also enjoy couscous but I never tghuhot to pair it with cherries. I'll have to let you know what my family and I think of this combination. Since my daughter is allergic to nuts we'll skip that ingredient. Still, great idea! Thanks!
